The guiding criterion for the choice of market segmentation for comparative claims was «consumer friendly»:

avoiding systems that are too segmented, complex and difficult to manage.

In view of the above principles, the breakdown of bakery products can be summarised in the following 7 groups, each of which shares homogeneity of raw materials, processes and consumption opportunities:
